FIRST FLIGHT  ~  Quiche Lorraine with Petite Salad

2009 Chardonnay
Tasting Notes: Golden straw color portrays the sublime stainless steel fermentation. Aromas of lemon thyme, passion fruit and freshly zested Meyer lemon rind provide focus for the palate. The wine permeates the senses with balanced texture and a full exposure of citrus, star fruit and minerality which is captured in the discipline of acidity and length.  311 cases produced.
 
2009 Viognier 
Tasting Notes: Platinum in the glass tattletales the sun ripened skins and fully developed aromatics that await. White flowers and honeysuckle are alluring and beckoning. The palate is unctuous, saturating and unrelenting with tropical jack fruit, mango and guava, and at the same time steeled with minerality. The transition to the lingering finish is seamless and evokes a longing to make another memory. 22 cases produced.  Stainless steel fermented.

 

SECOND FLIGHT  ~  Ballotin de Poulet Farci (Whole Boneless Chicken Stuffed, Rolled and Roasted)

2007 Vintage Debut Pinot Noir
Tasting Notes: montmorency cherry red shows in the glass. graceful aromas of crushed red raspberries, sandalwood, tilled soil, five spice and dried savory. the palate is elegant and provides an earthy core of sweetness encased by tart cherry compote, ripe red raspberries, and tea leaves. the finish lingers and is framed by integrated tannins and balanced acidity. unfined and unfiltered.

2007 Amalie Cuvee Pinot Noir
Tasting Notes: Amalie’s Cuvée showcases the elegance and finesse of our vineyard. We look for barrels that offer complexity, intriguing nuances with layers of fruit and texture. This wine’s power is in its seductive enchantment.

Perfumed aromas of violets, crimson rose, sandalwood, cinnamon, tart cherry and freshly grated ginger enliven the palate. Lively and focused Maraschino cherry (with the stem) and raspberry cocoa are the initial layers of Pinot Noir fruit followed by rich cherry compote and a hint of underbrush. A persistent and evolving finish of integrated tannins, dried tea leaves and firm acidity allude to lithe bottle development.  Or, more simply put, “Pretty Fruit, Nice Acid ®.”  Unfined and unfiltered. 311 cases produced.

Tasting Notes: Estate reveals the fully developed power, richness and balance from the vintage. We select barrels that enliven the palate and provide a lasting finish. Estate is the complement to Amalie’s Cuvée.
Pungent incense, five spice powder, candied red cherry and sweet cigar box cedar segue to a lithe palate experience. Candied red fruits, dried herbs and a sweet core of freshly tilled soil drench the plate. The rich mouth feel also shows focus and an effortless transition to the many layers of this wine. The mid-palate tension leaves a sense of something more just below the surface, waiting to be revealed. The expansive finish continues to develop underscoring the balance and power hidden in this vintage. Or, more simply put, “Pretty Fruit, Nice Acid ®.” Unfined and unfiltered. 277 cases produced.

 

THIRD FLIGHT  ~  Braised Pork Loin with Bourbon and Dried Plums

2008 Satisfaction Syrah
Tasting Notes: Intense and deep ruby red. Smoky grilled meat on the bone, black olive, coriander and fennel exude from the glass. Layers of flavors and textures relentlessly struggle for control of the palate while obeying firm acidity. Black raspberry, Asian spices and underbrush give a moment of pause before a taught and commanding finish. Unfined and unfiltered. 50 cases produced.
Note: this wine was fermented with indigenous yeast, 33% whole clusters, and a very small portion of Viognier, then barrel aged in 50% new oak for 22 months. This wine should continue to develop in bottle for 10+ years.
