FIRST FLIGHT

2010 Amavi Semillon  ~  Fresh Bay Shrimp Salad with Hoisin Vinaigrette and Fried Noodles
Fresh, vibrant notes of white peaches, honey and herbs mingle with aromas of honeysuckle flowers, lychee nuts and stones.  This wine is defined by balance—round yet crisp, fruity yet earthy.  Tropical flavors of passion fruit, mango and melon layer with elements of citrus, peach and slate.  A soft, palate-coating mouthfeel leads to a lively finish with beautiful hint of lemon, clean slate, and crisp acidity.

2010 Isenhower Pink Paintbrush Rosé, Yakima  
Pink Paintbrush is completely dry, high in acidity and generous amounts of strawberry, cherry, melon, and herb flavors. The color is the traditional European salmon as opposed to the modern “Rosè pretending to be a dark red wine”. Enjoy with dry cheese, olives, sushi, cookouts, hot tub parties, ... its pinkalicious!

 

SECOND FLIGHT ~  Arborio Risotto with English Peas and DuckConfit

2007 Helix Merlot, Columbia Valley (Reininger)
This wine will take you on a stroll through the Walla Walla Farmer’s Market on a damp late Spring morning. Here you encounter aromas of clean herbs like tarragon, basil, and parsley, juicy summer fruits in their wooden crates, and peppery arugula next to bouquets of just-blooming lillies. Take a sip and imagine yourself at the foothills of the Blue Mountains, the sun bright and the slight breeze carrying a hint of damp evergreen. With your best friends, enjoy a picnic of ripe Klicker strawberries, tart apricots, and fresh fruit tarts filled with gobs of cognac-laced pastry cream and garnished with sprigs of spearmint as you enjoy the view, the company, and your 2007 Helix Merlot.

2009 Walla Walla Vintners Cabernet Franc
The rum-dipped cigar nose takes you to a chocolate mousse mid-palate with a finish of fresh vanilla bean. It is a perfectly pitched wine that pairs wonderfully with roasted wild salmon on cedar plank and a side of scalloped potatoes, heavy cream, Gruyere cheese and nutmeg.


 

THIRD FLIGHT  ~  Italian Style Meatballs with Marinara Sauce and Freshly Grated Pecorino Romano

2007 Reininger Syrah, Walla Walla Valley
This delectable wine is characterized by sumptuous buckets of sun-ripened blueberry, lavender and a wee bit of orange zest on the nose. Once you sip, its flavors unfold, revealing blueberry, subtle smoke and juicy red pomegranate. The palate is round, smooth and ready, like a succulent filet mignon. Drink this baby now or delight in its glory after a rest in your cellar.

2007 Pepper Bridge Cabernet Sauvignon
The 2007 Cabernet Sauvignon starts with appealing aromas of dark chocolate and purple violets as well as fully developed, dense flavors of dark fruit. Ripe, blackberry, black cherry and black beauty plums layer with cassis, beautifully balanced earthy notes and a hint of saddle leather. Polished tannins and a subtle, lingering finish create a stunning rendition of a classic Cabernet Sauvignon. - Jean-François Pellet, Winemaker
